Cabo Fresh ~ Deliciousness Simply

Cabo is on the horizon for me and I’m already smelling the ocean air and hearing the crashing waves on the beach.  It’s been about five years since I’ve visited and it’s about damn time, I say! A known fishing mecca, (insert sad face here) I’m forced to reflect on my potential food choices in the land of seafood and cervezas.  No shade toward the cervezas, naturally!

Cabo is also supremely Baja Mexico.  Bountiful fruits and vegetables await and glorious aromatic flowers bloom everywhere.  Sunshine and 85 degrees are the standard weather and there can be no better environment for fresh and delicious al fresco dining while leaving the sweet innocent fish to swim in their intoxicating deep blue sea unharmed.

I’ve been to Cabo before as a plant-based eater and had absolutely no problem finding incredible food to indulge my hedonism.  Food is passion to me, and I must be able to feel satiated, pleasured and wowed by my culinary taste sensations.  Never a problem as a plant-based eater!

As my tastes buds have been exposed and stripped naked, expanded, and become more sensitive to the gentle nuances of simplicity and perfection found in food as nature provides, fruit and vegetables take on a life of their own.  The crisp of a watermelon radish, the sweetness of pineapple or mango, the tang of lime juice on jicama, the creaminess of black beans, the sublime herby grassiness and fragrance of cilantro. I'm hoping to get my lips on a subtlety earthy roasted nopales (cactus) burrito or Portobello and cauliflower taco! Topped with fresh guacamole and salsa, of course! I could live forever on such fresh and delicious simplicity.

So what will I eat in Cabo?  I know fresh fruit will be plentiful and the rest I will document here for you in my next post.  My travel compadres may, okay will, be immersed in a literal sea of seafood and most likely even other carnivorous escapades, but I’ll wager that even in Cabo, I can find amazing plant-based foods that will rock my world by fueling both my body and soul with health, intention, and yumminess.

There are always options, is my mantra, and I hope those options become more mainstream than they even are now!  As the entire world embraces more plant-based foods, my dream is to have at least one, if not several, completely plant-based, chef-driven (aka delicious and inspired) menu items for us to read, order, crave and devour, (yes, on every menu!) without having to overthink, reinvent, and strain our brains, yet be officially WOWED by the amazing tastes that can be born of fresh and whole food ingredients.  A girl can dream, can’t she? Always!
